Add the olive oil to a large skillet over medium high heat on the stove.
Place the chicken thighs into the heated skillet, seasoned with salt and pepper to taste on each side.

Reduce the heat in the skillet to medium and add in the minced garlic and tomato paste. Saute for 30 seconds.
