This low-carb vegetable beef soup is packed with green beans, cauliflower, and ground beef.
Cook the ground beef in a large pot over medium-high heat until completely browned. Drain any excess fat.
Stir the onions, peppers and celery mix into the pot.
Add the Italian seasoning, minced garlic, tomato paste, and salt and pepper to taste to the pot and stir well to combine.
Mix in the cauliflower florets and green beans.
Pour the beef broth into the pot to cover the ingredients
Reduce the temperature to a simmer, and simmer covered for 25-30 minutes until the vegetables are tender and cooked through.
