Ingredients

Salad

  • 24 ounces Chicken shredded, grilled or canned
  • 3/4 cup Carrots shredded
  • 1/2 Red Bell Pepper chopped
  • 4 Green Onions Chopped
  • 1 Jalapeno chopped
  • 1/2 cup Peanuts (optional)
  • 1/4 cup Fresh Cilantro

Peanut Dressing

  • 1/2 cup Creamy Natural Peanut Butter
  • 2 tbsp Soy Sauce or coconut aminos
  • 1 tbsp Sesame Oil
  • 2 tbsp Rice Vinegar
  • 1 tbsp Lime Juice
  • 1/2 tsp Garlic salt
  • 1/2 tsp Ground ginger
  • 2 tbsp Water

Instructions

  1. Place chicken in a large mixing bowl.

  2. Add shredded carrots, bell pepper, onions, jalapeno and peanuts. Toss together.

  3. In a separate bowl, whisk together ingredients for the Peanut Dressing.

  4. Pour the dressing over the salad ingredients. Mix well.

  5. Garnish with fresh cilantro and additional green onions, if desired.

  6. Drizzle with sriracha sauce, if you’d like a little extra heat.
