Ingredients

  • 3 cups Chicken shredded
  • 1/2 Medium Onion chopped
  • 1 cup Celery chopped
  • 2 tbsp Butter unsalted
  • 2 tsp Garlic minced
  • 3 tsp Italian Seasoning
  • 2 tsp Lemon Zest
  • 1 tbsp Lemon Juice Fresh-Squeezed
  • 3 cups Kale chopped
  • 3 cups Chicken Broth
  • 1 cup Heavy Whipping Cream
  • 1/2 cup Parmesan Cheese grated

Instructions

  1. Place the butter into a saucepan over medium heat on the stove.

  2. Add the onion and celery to the saucepan, and saute until becoming tender.

  3. Stir in the minced garlic, lemon zest, Italian seasoning and lemon juice.

  4. Whisk in the chicken broth, heavy whipping cream and parmesan cheese. Cover, and bring the mixture to a low boil.

  5. Add in the chicken and kale, and simmer over low heat for 15-20 minutes.

  6. Mix in salt and pepper to taste and serve.
