This cilantro lime cauliflower rice has a surprising ingredient - avocado! This recipe tastes better than Chipotle's version.
In a skillet, begin to heat olive oil. Add onion and garlic, saute until tender.
Stir in cauliflower rice. Continue to saute until rice is fully cooked.
In a separate bowl, mash avocados. Stir in lime juice and fresh cilantro.
Add the avocado mash to the cauliflower rice skillet. Stir well.
Garnish with crumbled feta.
