Cilantro Lime Cauliflower Rice

This cilantro lime cauliflower rice has a surprising ingredient - avocado! This recipe tastes better than Chipotle's version.

  • 12 ounces Cauliflower Rice
  • 2 Avocados Diced
  • 1/3 cup Feta Cheese Crumbled (optional)
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Minced
  • 1/2 White Onion chopped
  • 2 tsp Lime Juice
  • 1/4 cup Cilantro chopped


  1. In a skillet, begin to heat olive oil. Add onion and garlic, saute until tender.

  2. Stir in cauliflower rice. Continue to saute until rice is fully cooked.

  3. In a separate bowl, mash avocados. Stir in lime juice and fresh cilantro.

  4. Add the avocado mash to the cauliflower rice skillet. Stir well.

  5. Garnish with crumbled feta.

  6. ENJOY!
