Keto Cauliflower Potato Salad

Whether you call them loaded fauxtatoes or just a low-carb potato salad alternative, this recipe is perfect! Same flavor, less carbs!

Ingredients

Potato Salad

  • 1 head Cauliflower chopped
  • 2 stalks Celery chopped
  • 1/2 cup Radishes chopped
  • 3 large Hard-Boiled Eggs
  • 3 strips Bacon crumbled
  • 2 Green Onions chopped

Dressing

  • 1 cup Mayo
  • 1/4 cup Dijon Mustard
  • 1/4 cup Relish
  • 1 tbsp Apple Cider Vinegar

Instructions

  1. Roughly chop the cauliflower. Place in a pot and cover with water.

  2. Bring water to a boil. Once it is boiling, cook for another 2 minutes, then drain and let cool.

  3. Chop the cauliflower into bite sized pieces, along with celery, radishes and hard boiled eggs.

  4. In a small bowl, whisk together ingredients for the dressing.

  5. Place all the chopped ingredients in a large bowl. Top with dressing and toss well.

  6. Add salt and pepper to taste.

  7. Garnish with crumbled bacon and chopped green onions.
