These cilantro lime chicken lettuce wraps are a really easy lunch - especially if you make them in the Instant Pot.
Add olive oil to the Instant Pot. Turn on Saute function.
Add minced garlic and chopped white onion. Saute for 2-3 minutes, or until onion is translucent. Turn off Saute function.
Top the chicken with cumin and chili powder.
Add 1 cup of water to the Instant Pot.
Place the chicken breast in the pot and top with lime juice and fresh cilantro.
Close lid, seal steam release valve, cook on High Pressure for 10 minutes. Once the cooking time is complete, let the pressure release naturally.
Remove chicken from pot to shred. Then return back to the pot to soak up some additional flavor.
To create the Cilantro Lime Cream Sauce, simply whisk together all the ingredients. **If you would like a thinner consistency, feel free to add additional lime juice.
To create the lettuce wraps, grab a lettuce wrap and fill with shredded chicken. Top with chopped onion, tomatoes and cilantro. Drizzle with Cilantro Lime Cream Sauce and ENJOY!
