Keto Strawberry Popsicles

These keto strawberry popsicles are a refreshing and fun way to use garden strawberries. They are easy to make and kids love them!

Ingredients

  • 1 cup Heavy Whipping Cream
  • 8 ounces Cream Cheese softened to room temperature
  • 1 tsp Vanilla Extract
  • 1/2 cup Swerve Confectioner's Sweetener
  • 1 cup Strawberries thinly sliced

Instructions

  1. Start out by adding heavy whipping cream to a large mixing bowl, whip until soft peaks form. Next add the cream cheese, its easier if it’s broken into pieces so you don’t have to over mix the heavy cream. Add in vanilla extract, and confectioner’s sweetener. Blend until fully combined.

  2. Scoop two-thirds of the cream cheese mixture into a bowl. Gently fold 1/2 cup of the strawberries into the cream cheese mixture you just removed.

  3. Add ½ cup strawberries into blender with remaining cream cheese mixture. Blend on medium so that the strawberries become crushed and your mixture will become pink.

  4. Prepare your Dixie cups by adding the pink mixture from the blender, followed by the white cheesecake batter on top. Place the popsicle sticks in the center of each cup.

  5. Freeze for 4-5 hours or until the mixture is fully frozen. When ready to eat tear the cups off and enjoy!
