Keto Beef Stroganoff Soup

This easy keto beef stroganoff soup can be made with either ground beef or your favorite type of steak. Only 5g net carbs per serving!

Ingredients

  • 1 pound Ground Beef
  • 1/2 Onion chopped
  • 1 cup Mushrooms sliced thin
  • 2 tbsp Butter unsalted
  • 2 tsp Garlic minced
  • 6 cups Chicken Broth
  • 2 tsp Worcestershire sauce
  • 3 cups Raw Spinach
  • 1 can Palmini Lasagna Noodles drained and rinsed

Instructions

  1. Add the ground beef, onion and mushroom to a pot over medium high heat. Cook until the vegetables are softened and the beef is browned. Remove and set aside. Discard any extra grease.

  2. Reduce the heat to medium and add the butter and garlic to the pot. Saute for 30 seconds.

  3. Pour in the chicken broth, worcestershire sauce and salt and pepper to taste.

  4. Cut the palmini noodles in half lengthwise, and then in half again across.

  5. Add the noodles to the pot and bring to a low boil.

  6. Stir in the spinach and cook until wilted.

  7. Reduce the heat to medium low, and add in the heavy whipping cream and meat mixture.

  8. Simmer for 10 minutes before serving.
