This cheesy keto ground beef casserole is perfect for your family dinner! It is full of healthy spinach and mushrooms and kids love it.
Preheat the oven to 350 degrees.
Add the ground beef and onion to a skillet over medium high heat. Saute until the meat is completely browned and the onions are softened. Drain any excess fat.
Mix in the mushrooms and saute until beginning to soften.
Reduce the heat to medium and stir in the basil and minced garlic. Saute for 30 seconds.
Place the spinach in the skillet and saute until wilted.
Stir in the heavy whipping cream, parmesan cheese and mozzarella cheese until well combined and thickened.
Season with salt and pepper to taste.
Place the mixture into a well greased 9x9 baking dish.
Bake for 20 minutes. Let sit for 10 minutes before serving.
