This delicious cauliflower and pumpkin mash is a savory and creamy side dish that is perfect for large family dinners!
Place the chopped cauliflower in a large pot; Cover with water. Bring to a boil and cook for approximately 15 minutes, or until cauliflower is tender.
Drain water from the pot. Using an immersion blender (or food processor) break down the cooked cauliflower.
Add pumpkin and cream cheese. Blend once again.
Add garlic, onion, thyme and salt/pepper. Blend until everything is well mixed and you have a creamy texture.
Garnish with additional fresh thyme, if desired.
