Ingredients

Ground Beef Mixture

  • 1 pound Ground Beef
  • 2 tsp Taco Seasoning
  • 1/2 Onion chopped
  • 2 tsp Minced Garlic

Almond Flour Topping

  • 1 1/3 cup Almond Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 4 tbsp Butter melted
  • 3 large Eggs
  • 4 ounces Green Chilis diced
  • pinch Salt

Instructions

  1. Preheat the oven to 350 degrees.

  2. In a mixing bowl, beat together the almond flour, baking powder, baking soda, butter, eggs and salt until well combined.

  3. Stir in the green chilis.

  4. Cook the ground beef and onion in a skillet over medium high heat until the meat is browned and the onion has softened. Drain any excess grease.

  5. Stir in the taco seasoning and minced garlic, and saute for 2 minutes more.

  6. Spread the meat mixture in the bottom of a well greased 9x9 baking dish.

  7. Smooth the topping mixture over the meat.

  8. Bake for 25-30 minutes until golden brown and cooked through.

  9. Serve with chopped parsley and an optional sprinkle of chopped tomatoes if desired.
