Ingredients

Gingerbread Cake

  • 3 cups Almond Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2/3 cup Swerve Confectioner's Sugar Substitute
  • 4 large Eggs
  • 1/2 cup Oil
  • 1/2 cup Sour Cream
  • 12 tbsp Butter softened
  • 1 tsp Vanilla
  • 1/2 tsp Xanthan Gum
  • 3 tsp Cinnamon
  • 1/2 tsp Allspice
  • 1/4 tps Ground Cloves
  • 2 tsp Ground Ginger

Sugar-Free Cream Cheese Icing

  • 4 oucnes Cream Cheese softened
  • 1/3 cup Swerve Confectioner's Sugar Substitute
  • 1 tsp Vanilla
  • 1/2 tsp Cinnamon
  • 1/4 cup Heavy Whipping Cream

Instructions

  1. Preheat the oven to 350 degrees and grease the inside of a bundt pan well.

  2. In a mixing bowl, blend together all of the ingredients for the cake until smooth and creamy.

  3. Pour the batter into the bundt pan, and smooth out evenly.

  4. Bake for 40-45 minutes until cooked through.

  5. Let cool for 10 minutes, and then turn the cake out onto a plate or platter.

  6. Cool the cake to room temperature.

  7. Place the cream cheese, swerve sweetener, vanilla and cinnamon for the icing into a mixing bowl and blend until creamy.

  8. Add in the heavy whipping cream, and blend until smooth and fluffy.

  9. Spread the icing over the cake and serve.
