These low-carb gluten-free gingerbread pancakes taste like Christmas! Made with coconut flour and gingerbread spice, they are perfect.

Ingredients

  • 6 tbsp Coconut Flour
  • 4 Eggs
  • 4 ounces Cream Cheese softened
  • 1/2 cup Milk any kind
  • 2 tbsp Granulated Sugar Substitute
  • 1 tsp Baking Powder
  • 2 tsp Vanilla
  • 1 tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/4 tsp Allspice
  • 1/4 tsp Cloves
  • 2 tbsp Water

Instructions

  1. Combine all ingredients into a food processor or blender.

  2. Blend until you have a smooth texture. **If you want a thinner batter, feel free to add another 1-2 Tbsp of water

  3. Heat your griddle or skillet to medium high. Spoon batter onto the griddle (approximately ΒΌ cup for each pancake), cook for 1-2 minutes on each side.

  4. Remove pancakes and top with powdered sugar alternative, butter or sugar free syrup.
