Keto Sausage Muffins

Perfect as breakfast or a savory side dish, keto sausage muffins are low-carb and high in protein. Kids love them too!

Ingredients

  • 1/2 pound Breakfast Sausage cooked and crumbled
  • 1/2 cup Almond Flour
  • 1/3 cup Coconut Flour
  • 1 tpsp Xanthan Gum
  • 1 Egg
  • 1/4 cup Sour Cream +1 tablespoon
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 tsp Garlic Salt
  • 1/4 cup Mozzarella Cheese shredded
  • 1/2 cup Pepper Jack Cheese shredded

Instructions

  1. In a mixing bowl, combine almond flour, coconut flour and xanthan gum.

  2. Stir in sour cream and 1 egg.

  3. Add baking powder, salt and garlic salt. Mix well.

  4. Add cooked sausage and shredded cheese.

  5. Spray muffin tins with nonstick spray. Fill approximately 8-9 tins with the batter.

  6. Cook at 350 degrees F. for approximately 15-20 minutes.

  7. Remove and garnish with fresh parsley, if desired.
