In a mixing bowl, combine almond flour, coconut flour and xanthan gum.
Stir in sour cream and 1 egg.
Add baking powder, salt and garlic salt. Mix well.
Add cooked sausage and shredded cheese.
Spray muffin tins with nonstick spray. Fill approximately 8-9 tins with the batter.
Cook at 350 degrees F. for approximately 15-20 minutes.
Remove and garnish with fresh parsley, if desired.
