Keto Olive Oil Cake

Make a classic keto olive oil cake for the holidays. It's made with almond flour and only has 4g net carbs per slice!

Ingredients

  • 3 cups Almond Flour
  • 2 tsp Baking Powder
  • 1/2 cup Swerve Confectioner's Sugar Substitute
  • 1/2 cup Olive Oil
  • 1/4 cup Plain Greek Yogurt
  • 4 large Eggs
  • 1 Lemon Zest and Juice
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat the oven to 350 degrees.

  2. Add the ingredients to a mixing bowl, and beat on high until smooth.

  3. Spread the mixture into a well greased Springform pan.

  4. Bake for 40-45 minutes.

  5. Allow to cool to room temperature, and then dust with more confectioners sugar substitute before serving.
