Ingredients

  • 10 ounces Frozen Cauliflower Rice
  • 2 Eggs
  • 2 cups Fresh Baby Spinach
  • 5 slices Bacon chopped

Instructions

  1. Cook bacon in a skillet until crispy (or to your preferred doneness).

  2. Before adding the spinach, spoon out as much of the grease as possible.

  3. Add the baby spinach and saute for 30-40 seconds, or until the spinach is wilted. Remove from heat.

  4. Cook cauliflower rice according to package instructions.

  5. Cook eggs to your preference.

  6. Plate cauliflower rice first, then top with cooked bacon & baby spinach, followed by eggs.

  7. Add a dash of salt and pepper, if desired.
