This amazing King Ranch chicken casserole is low-carb, keto-friendly, gluten-free, and is ready in just an hour!
Preheat oven to 350 degrees.
Layer the tortillas pieces in the bottom of a well greased 9x13 baking dish.
Add the butter to a skillet over medium heat to melt.
Place the peppers and onions into the skillet, and saute until becoming tender.
Pour the heavy whipping cream and chicken broth into the skillet, and simmer until thickened.
Add in the bouillon powder, salt and pepper to taste, as well as the rotel. Stir to combine.
Mix in the chicken and green onions.
Layer the mixture over the tortillas in the baking dish, and sprinkle with the cheese.
Bake for 25-30 minutes.
Let rest 10 minutes before serving.
