Ingredients

  • 1 English Cucumber chopped
  • 1/2 cup Cherry Tomatoes halved
  • 1/4 cup Green Or Black Olives
  • 1/3 cup Feta Cheese crumbled
  • 1/4 cup Red Onion chopped
  • 3 tbsp Olive Oil
  • 1 tbsp Fresh Lemon Juice
  • 1 tbsp Red Wine Vinegar
  • 1 tsp Oregano

Instructions

  1. Add the cucumber, tomatoes, olives, red onion and feta to a bowl. Stir to combine well.

  2. In a small bowl, whisk together the olive oil, lemon juice, vinegar, oregano and salt and pepper to taste.

  3. Pour the mixture over the vegetables, and toss to coat well.

  4. Serve immediately, or chill before serving if desired.
