Ingredients

  • 1 Head of Cauliflower cut into bite-sized pieces
  • 1/4 cup Cotija Cheese crumbled
  • 1/4 cup Mayonnaise
  • 1/3 cup Sour Cream
  • 1 Lime
  • 1/2 tsp Garlic Salt
  • 1/4 tsp Chili Powder add another tsp for roasting the cauliflower
  • 1/4 tsp Cumin
  • 3 tbsp Olive Oil
  • 1 Jalapeno

Instructions

  1. Preheat the oven to 420 degrees F.

  2. Spread chopped cauliflower on a large baking sheet. Drizzle with olive oil. Top with 1 tsp of chili powder.

  3. Cook for approximately 20 minutes, tossing halfway.

  4. In a bowl, whisk together mayo, sour cream, garlic salt, chili powder and cumin. Stir in the juice of ½ lime (approximately 1 tbsp). **Slice the remaining half of the lime into wedges.

  5. Remove cauliflower from the oven and top with dressing. Garnish with cotija cheese, fresh cilantro, and sliced jalapeno (if desired). Serve with remaining lime wedges.
