These keto stuffed peppers taste like sloppy joes! They are filled with ground beef in a savory tomato sauce, with lots of cheese!
Preheat the oven to 375 degrees.
Place the meat and onions in a skillet over medium-high heat on the stove. Saute until the meat is completely browned and the onions have begun to soften.
Turn the heat down to medium, and add in the garlic powder, chili powder, beef broth, tomato paste, dijon mustard, Worcestershire sauce, apple cider vinegar and, salt and pepper to taste. Stir to combine well, and continue to cook down until the liquid is reduced and the sauce thickens.
Cut the tops off of the bell peppers, and scoop out the seeds etc. from the inside.
Place the peppers cut side up in a 9x9 baking dish, and fill with the sloppy joe mixture.
Top each pepper with cheese, and then place aluminum foil over the top of the baking dish. Make sure the foil is tented so that it does not touch the cheese on top of the peppers.
Bake for 30 minutes, remove the aluminum foil and then bake for another 10 minutes. Garnish with freshly chopped parsley before serving if desired.
