Ingredients

  • 1 pound Shredded Chicken
  • 1 cup Heavy Whipping Cream
  • 1/3 cup Sour Cream
  • 1/2 tsp Chicken Boullion
  • 1/2 tsp Garlic Powder
  • 1 cup Shredded Cheddar Jack Cheese
  • 1/2 cup Cottage Cheese
  • 1 cup Crushed Pork Rind Crumbs
  • 1/4 cup Parmesan Cheese grated

Instructions

  1. Preheat the oven to 350 degrees.

  2. Add the heavy whipping cream, sour cream, bouillon powder, garlic powder and salt and pepper to taste to a saucepan over medium heat.

  3. Simmer until the mixture thickens and is combined.

  4. Stir in the shredded cheese until melted.

  5. Remove from the heat and let cool.

  6. In a bowl, combine the pork rind crumbs and parmesan cheese until well combined.

  7. Mix together the shredded chicken, cottage cheese and sauce mixture.

  8. Spread the mixture in the bottom of a well greased casserole dish.

  9. Sprinkle with the pork rind crumb mixture, and bake for 30 minutes.

  10. Let cool 5-10 minutes before serving.
