Ingredients

  • 1 1/2 pounds Boneless Pork Chops cut into strips or bite-sized pieces
  • 2 tbsp Olive Oil
  • 1 Red Bell Pepper Cut Into Chunks
  • 1 Green Bell Pepper Cut Into Chunks
  • 1/2 Onion Cut Into Chunks
  • 2 tsp Minced Garlic
  • 2 tbsp Sugar-Free Ketchup
  • 3 tbsp Rice Wine Vinegar
  • 2 tbsp Soy Sauce
  • 1 tsp Ginger Paste

Instructions

  1. Heat the oil in a skillet over medium high heat.

  2. Season the pork with salt and pepper to taste, and add to the heated skillet.

  3. Sear on all sides, and then add in the onion and peppers.

  4. Saute until the vegetables are a crisp tender, and the pork is cooked through.

  5. Mix in the garlic, and saute another 30 seconds.

  6. In a bowl, combine the ketchup, vinegar, soy sauce and ginger paste.

  7. Pour the sauce mixture into the skillet, and toss to combine.

  8. Simmer for another 5 minutes, and allow to rest off the heat for 5-10 minutes before serving.

  9. Garnish with green onions if desired.
