Preheat the oven to 400 degrees.
Place the olive oil and onions in a skillet over medium heat. Saute until the onions soften.
Stir in the chicken, garlic, and saute another 30 seconds.
Mix in the spinach, and saute until wilted.
Add in the cream cheese, and cook until melted.
Place the cranberries and pecans in the skillet, and stir to combine.
Season with salt and pepper to taste.
Arrange the mozzarella cheese into 8 evenly sized flattened circles on a parchment lined baking sheet.
Bake for 8-10 minutes, or until the edges of the cheese circles are turning brown and crispy.
Remove, and lte cool for one minute.
Place a layer of the filling down the center of each cheese circle.
Let the cheese cool 1-2 more minutes, and then carefully fold the cheese circles up and over the filling. Be careful, the cheese will still be hot.
Let the rollups cool and crisp up before serving.
