Garlic Butter Chicken Foil Packets

Make dinner-time easy! These low-carb chicken foil packets are a simple 30-minute meal that uses just one pan (and makes clean-up easy too).

Equipment

  • Foil
  • Baking Sheet

Ingredients

  • 2 Zucchini
  • 2 Chicken Breasts
  • 2 tbsp Butter
  • 4 tsp Minced Garlic
  • Feta Cheese Garnish
  • Fresh Parsley Garnish

Instructions

  • Chop chicken into bite sized pieces. Top with a dash of salt & pepper.
  • Chop zucchini into bite sized pieces.
  • Using foil, create 4 large boats.
  • Place equal amounts of chicken and zucchini in each of the foil boats.
  • Top each with 1 tsp of minced garlic and ½ tsp of butter.
  • Close each foil pack.
  • Bake at 425 degrees F for approximately 30 minutes.
  • Remove and let cool, slightly.
  • Garnish with fresh parsley and crumbled feta cheese.

Notes

I like to spray the foil with nonstick spray, as well.
