Ingredients

Asparagus and Eggs

  • 1/2 pound Asparagus
  • 2 tbsp Butter
  • 2 tsp Minced Garlic
  • 2 large Eggs
  • Salt and Pepper to taste

Warm Bacon Dressing

  • 2 tbsp Bacon cooked and crumbled
  • 1 tbsp Finely chopped red onion
  • 1/2 tsp White Vinegar
  • 1/2 tsp Swerve Granulated Sugar Substitute
  • Salt and Pepper to taste
  • 2 tbsp Olive Oil

Instructions

  • Add the butter to a skillet over medium high heat.
  • Place the asparagus into the skillet, and season with salt and pepper to taste.
  • Saute until nearly cooked to your liking and a crisp tender.
  • Stir in the garlic, saute 30 seconds longer.
  • Reduce the heat to medium, and gather the asparagus in a neat pile in the center of the skillet.
  • Break the eggs carefully over the asparagus.
  • Cook until the egg whites are cooked through, and the eggs are done to your liking.
  • To a skillet, add the olive oil over medium heat.
  • Stir in the red onion, and saute until becoming tender.
  • Add in the remaining dressing ingredients until warmed through.
  • Drizzle the dressing over the asparagus and eggs before serving.
