Ingredients

Salad

  • 5 cups Broccoli Florets cut into bite sized pieces
  • 2 cups Chopped Romaine Lettuce
  • 2 slices Keto Bread cut into cubes
  • 1 tbsp Olive Oil
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Basil
  • 1/4 cup Shaved Parmesan Cheese

Keto Caesar Dressing

  • 1/2 cup Mayonnaise
  • 1 tbsp Lemon Juice
  • 1/2 tsp Anchovy Paste
  • 1 tsp Minced Garlic
  • 1 tsp Worcestershire Sauce
  • 1/4 cup Parmesan Cheese grated
  • 1/2 tsp Dijon Mustard

Instructions

  • To make the keto croutons, chop up the keto bread into cubes. Add olive oil, salt, and pepper, garlic powder, and basil and mix well. Air fry them at 400F for about 10 minutres.
  • Lightly steam the broccoli until it is a crisp tender. Run immediately under cold water and strain well.
  • Add the broccoli and romaine to a mixing bowl.
  • In a small bowl, whisk together the dressing ingredients.
  • Pour the dressing over the salad mixture, and toss to combine well.
  • Toss in the shaved parmesan and croutons before serving.
