Ingredients

  • 2 tbsp Olive Oil
  • 1 pound Chicken Breasts Cut into bite-sized pieces
  • 1 pound Shrimp peeled and deveined
  • 3 tsp Cajun Seasoning Divided
  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 1/2 Red Bell Pepper chopped
  • 1/2 cup Celery chopped
  • 2 tsp Minced Garlic
  • 4 ounces Cream Cheese
  • 3 cups Chicken Broth
  • 1 cup Monterey Jack Cheese shredded
  • 2 tbsp Bacon Pieces for garnish
  • 1/4 cup Green Onions chopped

Instructions

  • Heat the olive oil in a skillet over medium high heat.
  • Add in the chicken, and season it with 1 tsp of the cajun seasoning. Saute until browned and cooked through. Remove and set aside.
  • Place the shrimp into the same skillet, and season with 1 tsp of the cajun seasoning. Saute until cooked through. Remove and set aside.
  • Melt the butter in a pot over medium heat.
  • Add in the celery, onion and red bell pepper. Saute until the vegetables have softened.
  • Stir in the garlic and remaining cajun seasoning.
  • Mix in the cream cheese until melted.
  • Pour in the chicken broth, and stir to combine well.
  • Return the meat to the pot, and simmer for another 5 minutes.
  • Garnish with cheese, green onions and bacon before serving.
