Ingredients

  • 2 tbsp Olive Oil
  • 1 pound Chicken Breasts Cut into bite-sized pieces
  • 1 pound Shrimp peeled and deveined
  • 3 tsp Cajun Seasoning Divided
  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 1/2 Red Bell Pepper chopped
  • 1/2 cup Celery chopped
  • 2 tsp Minced Garlic
  • 4 ounces Cream Cheese
  • 3 cups Chicken Broth
  • 1 cup Monterey Jack Cheese shredded
  • 2 tbsp Bacon Pieces for garnish
  • 1/4 cup Green Onions chopped

Instructions

  1. Heat the olive oil in a skillet over medium high heat.

  2. Add in the chicken, and season it with 1 tsp of the cajun seasoning. Saute until browned and cooked through. Remove and set aside.

  3. Place the shrimp into the same skillet, and season with 1 tsp of the cajun seasoning. Saute until cooked through. Remove and set aside.

  4. Melt the butter in a pot over medium heat.

  5. Add in the celery, onion and red bell pepper. Saute until the vegetables have softened.

  6. Stir in the garlic and remaining cajun seasoning.

  7. Mix in the cream cheese until melted.

  8. Pour in the chicken broth, and stir to combine well.

  9. Return the meat to the pot, and simmer for another 5 minutes.

  10. Garnish with cheese, green onions and bacon before serving.
