Ingredients

  • 2 pounds Boneless skinless chicken thighs cut into bite sized pieces
  • 2 tbsp Olive Oil
  • 1/2 cup Celery chopped
  • 1/2 Onion chopped
  • 1/3 cup Matchstick Carrots
  • 3 tsp Minced Garlic
  • 2 tbsp Ranch Seasoning
  • 2 cups Chicken broth
  • 3 cups Kale
  • 1 cup Heavy Whipping Cream

Instructions

  • Add the olive oil to a skillet over medium high heat.
  • Sear the chicken pieces, and then pour into the Crockpot.
  • Place the celery, onion, carrots, garlic, ranch seasoning, chicken broth and salt and pepper to taste into the crockpot with the chicken.
  • Cover and cook on low for 4 hours.
  • Remove the lid, and add in the heavy whipping cream and kale. Stir to combine.
  • Cover, and cook on high for 1 hour.
