Ingredients

  • 1 1/2 pounds Large Shrimp peeled and deveined with tails removed
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste
  • 3 tbsp Butter
  • 1/2 Onion Chopped
  • 3 tsp Minced Garlic
  • 1 tsp Basil
  • 1 pinch Nutmeg
  • 1 cup Heavy Whipping Cream
  • 1/2 cup Parmesan Cheese grated (plus 1/4 cup)
  • 1 1/2 cups Shredded Monterey Jack Cheese
  • 1/4 cup Crushed Pork Rind Crumbs

Instructions

  • Preheat the oven to 375 degrees.
  • Heat the olive oil in a skillet over medium high heat.
  • Season the shrimp with salt and pepper to taste, and sear the shrimp until just cooked through.
  • In a saucepan, melt the butter over medium heat.
  • Stir in the onions, and saute until they have softened.
  • Mix in the garlic, basil and nutmeg. Saute for 30 seconds.
  • Pour in the heavy whipping cream, and simmer until thickened.
  • Stir in ½ cup of parmesan cheese and monterey jack cheese.
  • Season with salt and pepper to taste.
  • Pour the sauce over the shrimp, and layer into a well greased baking dish.
  • Combine the remaining parmesan and pork rind crumbs in a bowl.
  • Sprinkle the mixture over the shrimp.
  • Bake for 25 minutes.
