Ingredients

Pound Cake

  • 2 1/2 cups Almond Flour
  • 4 large Eggs
  • 3 tsp Baking Powder
  • 1 cup Swerve Confectioner's Sugar Substitute
  • 2 sticks Butter softened
  • 1/2 tsp Xanthan Gum
  • 1/2 cup Chopped Pecans
  • 1/3 cup Keto Chocolate Chips chopped

Chocolate Topping

  • 1/2 cup Keto Chocolate Chips
  • 3 tbsp Heavy Whipping Cream
  • 1/3 cup Chopped Pecans

Instructions

  • Preheat the oven to 350 degrees.
  • Cream together the butter and Swerve until smooth and fluffy.
  • Blend in the almond flour, eggs, baking powder and xanthan gum until well combined.
  • Fold the pecans and chopped chocolate into the batter.
  • Spread the batter into a well greased loaf pan.
  • Bake for 20 minutes, then tent with aluminum foil and bake for another 20-30 minutes until cooked through.
  • Let the pound cake cool.
  • Place the chocolate chips and heavy whipping cream into a microwave safe bowl. Heat at 30 second intervals until melted and combined.
  • Spread the mixture over the cooled pound cake, and sprinkle with the pecans. Let the icing set before serving.
