Ingredients

Gingerbread Cake

  • 3 cups Almond Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2/3 cup Swerve Confectioner's Sugar Substitute
  • 4 large Eggs
  • 1/2 cup Oil
  • 1/2 cup Sour Cream
  • 12 tbsp Butter softened
  • 1 tsp Vanilla
  • 1/2 tsp Xanthan Gum
  • 3 tsp Cinnamon
  • 1/2 tsp Allspice
  • 1/4 tps Ground Cloves
  • 2 tsp Ground Ginger

Sugar-Free Cream Cheese Icing

  • 4 oucnes Cream Cheese softened
  • 1/3 cup Swerve Confectioner's Sugar Substitute
  • 1 tsp Vanilla
  • 1/2 tsp Cinnamon
  • 1/4 cup Heavy Whipping Cream

Instructions

  • Preheat the oven to 350 degrees and grease the inside of a bundt pan well.
  • In a mixing bowl, blend together all of the ingredients for the cake until smooth and creamy.
  • Pour the batter into the bundt pan, and smooth out evenly.
  • Bake for 40-45 minutes until cooked through.
  • Let cool for 10 minutes, and then turn the cake out onto a plate or platter.
  • Cool the cake to room temperature.
  • Place the cream cheese, swerve sweetener, vanilla and cinnamon for the icing into a mixing bowl and blend until creamy.
  • Add in the heavy whipping cream, and blend until smooth and fluffy.
  • Spread the icing over the cake and serve.
