1 1/2poundsGround Beef
1/2Onion chopped
1largeJalapenochopped
2tspMinced Garlic
2tspChili Powder
1tspCumin
1tspPaprika
3ounces Cream Cheese softened
1cupRoteldrained
1/4cupBeef Broth
1/4cupChopped Green Onions
2Zero Carb Soft Taco Sized Tortillas sliced into pieces
1 1/2cupsShredded Cheddar Cheese
Instructions
Add the ground beef and onion to a skillet over medium high heat.
Saute until the meat is mostly browned.
Stir in the jalapeno pepper, and saute until the meat is completely browned. Drain the excess grease well.
Reduce the heat to medium, and mix in the chili powder, cumin, paprika, garlic cream cheese and salt and pepper to taste. Saute until the cheese is melted and combined.
Pour in the Rotel and beef broth, and simmer until most of the liquid is absorbed.
Stir in the green onions and tortilla strips.
Turn the heat off, sprinkle with the cheese, and cover with a lid until the cheese has melted before serving.
