Keto Sausage and Chicken Cajun Alfredo Skillet

Add some heat to your alfredo sauce! This keto chicken and sausage dish is topped with Cajun alfredo sauce. It's a fun twist.

Ingredients

  • 12 ounces Andouille Sausage sliced
  • 1 pound Boneless Skinless Chicken Thighs cut into bite-sized pieces
  • 3 tsp Cajun Seasoning divided
  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 1/2 cup Celery sliced
  • 1/2 Red Bell Pepper Chopped
  • 2 tsp Minced Garlic
  • 1 cup Heavy Whipping Cream
  • 1/3 cup Parmesan Cheese grated
  • 3 cups Cauliflower Rice cooked
  • 1/4 cup Chopped Green Onions for Garnish

Instructions

  • Heat the olive oil in a skillet over medium high heat.
  • Add the chicken to the heated skillet, and season with half of the cajun seasoning. Saute until the chicken is completely cooked through. Remove and set aside.
  • Place the sausage into the skillet, and saute until browned and heated through. Remove and set aside.
  • Drain any oil from the skillet, and reduce the heat to medium.
  • Melt the butter in the skillet, and then stir in the onions, peppers and celery. Saute until the vegetables have softened.
  • Mix in the garlic, and saute another 30 seconds.
  • Pour in the heavy whipping cream, and simmer until thickened.
  • Stir in the parmesan and remaining seasoning until well combined.
  • Return the meat to the skillet, and stir to combine.
  • Mix in the cauliflower rice, and simmer for another 5 minutes.
  • Serve garnished with green onions.
