Preheat a mini waffle maker.
Whisk together 4 of the eggs, the shredded mozzarella and salt to taste in a mixing bowl.
Place 2-3 tbsp of the mixture into the heated mini waffle maker, and cook until browned.
Remove the chaffle, and repeat the process until you have made a total of 8 chaffles.
Whisk six of the eggs with the heavy whipping cream.
Heat a skillet over medium low heat on the stove, and cook the eggs until mostly solid. Cut the eggs in half, and then fold each half up over the other to form two omelette shapes.
Cook the sausage in the microwave according to package instructions.
Layer one chaffle on a plate.
Top with the sausage patty, 1⁄4 of the egg and 1 slice of cheddar cheese.
Place another chaffle on top.
Drizzle with sugar free maple syrup and serve.
