2tbspButter
1/2Onion Chopped
2tspMinced Garlic
3ounces Cream Cheese softened
1/4tspPaprika
1/2tspItalian Seasoning
1/2cupHeavy Whipping Cream
1/2cupShredded Mozzarella Cheese
1cupShredded Cheddar Cheese
Salt and Pepperto taste
2largeZucchini sliced thinly
Instructions
Preheat the oven to 350 degrees.
Melt the butter in an ovenproof skillet over medium heat.
Stir in the onions, and saute until softened.
Add in the garlic, paprika, Italian seasoning, cream cheese and salt and pepper to taste. Stir and saute until the cream cheese has melted.
Pour in the heavy whipping cream, and simmer until the sauce thickens.
Mix in the mozzarella and cheddar cheeses. Remove the sauce and set aside.
To the same skillet, layer the zucchini slices in circles, slightly overlapping them over each other.
Pour the sauce over the zucchini.
Place the skillet into the oven and bake for 20-25 minutes.
Let rest for 10 minutes before serving.
