Keto Sweet and Sour Meatball Kebabs

This is the tastiest way to eat vegetables. Keto sweet and sour meatballs on a skewer with peppers are a grilled delight (4 grams net carbs).

Ingredients

  • 1 pound Ground Beef
  • 1/2 Red Bell Pepper chopped into large pieces
  • 1/2 Yellow Bell Pepper chopped into large pieces
  • 1/2 Green Bell Peppers chopped in large pieces
  • 1/2 Red Onion chopped into large pieces
  • 1/4 cup Egg Whites
  • 1/3 cup Pork Rind Crumbs
  • 2 tsp Minced Garlic
  • 3 tbsp Soy Sauce
  • 3 tbsp Sugar-Free Ketchup
  • 1 tbsp Sugar-Free BBQ Sauce
  • 2 tsp Ginger Paste

Instructions

  • Place the ground beef, egg whites, pork rind crumbs, minced garlic and salt and pepper to taste in a mixing bowl. Knead until well combined, and form into evenly sized meatballs.
  • Add the meatballs to the skewers, alternating with pieces of bell peppers and onion.
  • Heat the grill to high.
  • Place the skewers on the grill, and sear evenly on both sides for about 5 minutes per side until the meatballs are cooked through.
  • Whisk together the soy sauce, ketchup, bbq sauce and ginger paste in a bowl.
  • Brush the sauce over the skewers as they cook, reserve the remaining sauce to brush the skewers with before serving.
