1 1/2poundsBoneless Pork Chopscut into strips or bite-sized pieces
2tbspOlive Oil
1Red Bell Pepper Cut Into Chunks
1Green Bell Pepper Cut Into Chunks
1/2Onion Cut Into Chunks
2tspMinced Garlic
2tbspSugar-Free Ketchup
3tbspRice Wine Vinegar
2tbspSoy Sauce
1tspGinger Paste
Instructions
Heat the oil in a skillet over medium high heat.
Season the pork with salt and pepper to taste, and add to the heated skillet.
Sear on all sides, and then add in the onion and peppers.
Saute until the vegetables are a crisp tender, and the pork is cooked through.
Mix in the garlic, and saute another 30 seconds.
In a bowl, combine the ketchup, vinegar, soy sauce and ginger paste.
Pour the sauce mixture into the skillet, and toss to combine.
Simmer for another 5 minutes, and allow to rest off the heat for 5-10 minutes before serving.
Garnish with green onions if desired.
