2 1/2cupsAlmond Flour
2/3cupsShredded Zucchini with all the water squeezed out
1/2cupPumpkin Puree
3largeEggs
1tspVanilla Extract
2tspPumpkin Pie Spice
2/3cupSwerve Confectioner's Sugar Substitute
2tspBaking Powder
2ouncesCream Cheese softened
1/4cupPumpkin Seeds
Instructions
Preheat the oven to 350 degrees, and line a loaf pan with parchment paper.
Add all of the ingredients except for the pumpkin seeds to a mixing bowl, and blend until smooth.
Spread the mixture into the loaf pan.
Sprinkle with the pumpkin seeds.
Bake for 30-40 minutes, or until cooked through and browned.
Allow to cool before slicing to serve.
