Ingredients

  • 2 1/2 cups Almond Flour
  • 2/3 cups Shredded Zucchini with all the water squeezed out
  • 1/2 cup Pumpkin Puree
  • 3 large Eggs
  • 1 tsp Vanilla Extract
  • 2 tsp Pumpkin Pie Spice
  • 2/3 cup Swerve Confectioner's Sugar Substitute
  • 2 tsp Baking Powder
  • 2 ounces Cream Cheese softened
  • 1/4 cup Pumpkin Seeds

Instructions

  • Preheat the oven to 350 degrees, and line a loaf pan with parchment paper.
  • Add all of the ingredients except for the pumpkin seeds to a mixing bowl, and blend until smooth.
  • Spread the mixture into the loaf pan.
  • Sprinkle with the pumpkin seeds.
  • Bake for 30-40 minutes, or until cooked through and browned.
  • Allow to cool before slicing to serve.
