2Eggs
2cupsFresh Baby Spinach
5slicesBaconchopped
Instructions
Cook bacon in a skillet until crispy (or to your preferred doneness).
Before adding the spinach, spoon out as much of the grease as possible.
Add the baby spinach and saute for 30-40 seconds, or until the spinach is wilted. Remove from heat.
Cook cauliflower rice according to package instructions.
Cook eggs to your preference.
Plate cauliflower rice first, then top with cooked bacon & baby spinach, followed by eggs.
Add a dash of salt and pepper, if desired.
