Ingredients

  • 10 ounces Frozen Cauliflower Rice
  • 2 Eggs
  • 2 cups Fresh Baby Spinach
  • 5 slices Bacon chopped

Instructions

  • Cook bacon in a skillet until crispy (or to your preferred doneness).
  • Before adding the spinach, spoon out as much of the grease as possible.
  • Add the baby spinach and saute for 30-40 seconds, or until the spinach is wilted. Remove from heat.
  • Cook cauliflower rice according to package instructions.
  • Cook eggs to your preference.
  • Plate cauliflower rice first, then top with cooked bacon & baby spinach, followed by eggs.
  • Add a dash of salt and pepper, if desired.
