14ouncesNatural kielbasasliced
2tbspOlive Oil
2tbspButter
1/3cupOnion chopped
2tspMinced Garlic
1tspItalian Seasoning
1 1/4cupHeavy Whipping Cream
1cupShredded White Cheddar Cheese
1/2cupSugar-Free Dried Cranberries
3cupsRaw Spinach
Instructions
Heat the olive oil in a skillet over medium high heat.
Add in the kielbasa, and saute until crispy and browned. Remove and set aside.
Drain any excess oil from the pan.
Stir in the butter and onions, and saute until tender.
Mix in the garlic and Italian seasoning, and saute for 30 seconds.
Pour in the heavy whipping cream, and season with salt to taste.
Add the cranberries and spinach to the skillet, and saute until the spinach is wilted and the sauce has thickened.
Stir in the white cheddar cheese, and stir until completely melted.
Return the kielbasa to the skillet, and stir to combine before serving.
