Low Carb Cheesy White Cheddar Kielbasa Skillet

Ingredients

  • 14 ounces Natural kielbasa sliced
  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • 1/3 cup Onion chopped
  • 2 tsp Minced Garlic
  • 1 tsp Italian Seasoning
  • 1 1/4 cup Heavy Whipping Cream
  • 1 cup Shredded White Cheddar Cheese
  • 1/2 cup Sugar-Free Dried Cranberries
  • 3 cups Raw Spinach

Instructions

  • Heat the olive oil in a skillet over medium high heat.
  • Add in the kielbasa, and saute until crispy and browned. Remove and set aside.
  • Drain any excess oil from the pan.
  • Stir in the butter and onions, and saute until tender.
  • Mix in the garlic and Italian seasoning, and saute for 30 seconds.
  • Pour in the heavy whipping cream, and season with salt to taste.
  • Add the cranberries and spinach to the skillet, and saute until the spinach is wilted and the sauce has thickened.
  • Stir in the white cheddar cheese, and stir until completely melted.
  • Return the kielbasa to the skillet, and stir to combine before serving.
