Ingredients

Crust

  • 1 3/4 cups almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 cup sugar substitute
  • 1/3 cup coconut oil
  • 1/4 cup sugar-free maple syrup

Cranberry Filling

  • 12 ounces fresh cranberries
  • 1 cup water
  • 1/2 cup powdered sugar substitute
  • 1 tbsp lemon juice

Instructions

  • Whisk together flour, baking powder, sugar, salt, and cinnamon.
  • Stir in coconut oil and maple syrup. Reserve approximately ¼ cup of the mixture. Pour remaining into a parchment paper-lined baking dish.
  • Bake at 350 degrees for approximately 18 minutes.
  • While the crust is baking, heat the cranberry filling ingredients. Bring to a boil and continue to stir until it begins to thicken.
  • Remove from heat and let cool.
  • Pour cranberry mixture onto the crust. Top with reserved crust mixture and chocolate chips.
  • Bake at 350 degrees F for another 15 minutes. Remove the let cool.
  • Enjoy!
