Ingredients

  • 6 eggs hardboiled
  • 1 cucumber chopped
  • 3 celery stalks chopped
  • 6 slices bacon cooked and crumbled
  • 2 green onions chopped
  • 1/4 cup fresh parsley chopped
  • 1/3 cup mayo
  • 1 tbsp spicy brown mustard
  • 1 tsp hot sauce
  • 1 tsp paprika

Instructions

  • In a large bowl, combine chopped eggs and cucumber.
  • Add chopped celery, bacon, and green onions.
  • In a separate bowl, combine mayo, mustard, and hot sauce.
  • Pour mixture over the chopped ingredients. Stir well.
  • Add fresh parsley and paprika. Stir.
  • Top with additional bacon crumbles and fresh parsley, if desired.
  • Enjoy!
