Ingredients

Salad

  • 6 cups Lettuce Mix
  • 1/2 cup Roasted Butternut Squash cut into cubes
  • 1/4 cup Walnuts
  • 1/4 cup Feta Cheese crumbled
  • 1/4 cup Pumpkin Seeds
  • 1 Avocado diced

Sugar-Free Honey Mustard Dressing

  • 1 tbsp Apple Cider Vinegar
  • 3 tbsp Olive Oil
  • 2 tsp Sugar-Free Honey
  • 1 tsp Dijon Mustard
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder

Instructions

  • Add the salad to a large serving bowl.
  • Layer the butternut squash, walnuts, feta, pumpkin seeds and avocado on top.
  • Whisk together the ingredients for the dressing in a bowl.
  • Drizzle the dressing over the salad, toss to coat well and serve.
