1poundBoneless Skinless Chicken Breasts
1Red Bell Pepper chopped
1/2Onion chopped
3tspGreek Seasoning
1tspOregano
2tspMinced Garlic
Juice from 1/2 a Lemon
1Zucchini chopped
2Roma Tomatoes chopped
3ouncesCream Cheese softened
4cupsChicken Broth
1/4cupFeta Cheese
1/4cupGreek Olives
Instructions
Add the chicken breasts to the bottom of the crockpot, and sprinkle with the Greek seasoning and oregano.
Place the onions, bell peppers, zucchini, romas, garlic, dill and cream cheese into the crockpot.
Pour in the lemon juice and chicken broth.
Cover and cook on high for 3 hours.
Remove the chicken and shred it well.
Return the chicken to the crockpot, and stir to combine everything together well.
Garnish with feta cheese and Greek olives before serving.
