Ingredients

  • 1 pound Boneless Skinless Chicken Breasts
  • 1 Red Bell Pepper chopped
  • 1/2 Onion chopped
  • 3 tsp Greek Seasoning
  • 1 tsp Oregano
  • 2 tsp Minced Garlic
  • Juice from 1/2 a Lemon
  • 1 Zucchini chopped
  • 2 Roma Tomatoes chopped
  • 3 ounces Cream Cheese softened
  • 4 cups Chicken Broth
  • 1/4 cup Feta Cheese
  • 1/4 cup Greek Olives

Instructions

  • Add the chicken breasts to the bottom of the crockpot, and sprinkle with the Greek seasoning and oregano.
  • Place the onions, bell peppers, zucchini, romas, garlic, dill and cream cheese into the crockpot.
  • Pour in the lemon juice and chicken broth.
  • Cover and cook on high for 3 hours.
  • Remove the chicken and shred it well.
  • Return the chicken to the crockpot, and stir to combine everything together well.
  • Garnish with feta cheese and Greek olives before serving.
