Ingredients

Salad

  • 2 Chicken Breasts
  • 5 slices Bacon
  • 3 Hard Boiled Eggs chopped
  • 1/3 cup Onion chopped
  • 1/2 cup Cherry Tomatoes sliced in half
  • 6 ounces Spring Salad Mix
  • 2 tbsp Olive Oil

Keto Honey Mustard Dressing

  • 1/4 cup Olive Oil
  • 4 tbsp Dijon Mustard
  • 3 tbsp Honey
  • 2 tbsp Apple Cider Vinegar

Instructions

  • Cut the chicken breast into bite sized pieces. Season with salt and pepper.
  • Begin to cook chicken in a large skillet with olive oil. Saute until all sides are slightly brown and cooked through. Remove from heat and set aside.
  • Cook bacon slices. Remove from heat and crumble.
  • To create the Honey Mustard Dressing, whisk together all the ingredients in a small bowl until creamy.
  • To create the salad, place the spring salad mix in a large bowl.
  • Top with chicken, bacon, eggs, onion and cherry tomatoes.
  • Drizzle with preferred amount of the Honey Mustard Dressing and toss.
