1/3cupHomemade Pesto
1/3cupRed OnionChopped
10Cherry Tomatoes Sliced In Half
Low-Carb Pesto
1cupFresh Basil
1/4cupOlive Oil
1/3cupParmesan Cheese
1tspMinced Garlic
1tspLemon Juice
Instructions
In a food processor, blend together all the ingredients for the homemade pesto.
In a bowl, combine canned chicken, pesto, onion, tomatoes and a dash of salt and pepper. Toss well.
Garnish with fresh basil, additional shredded parmesan cheese and a squeeze of lemon juice if desired.
