Ingredients

Chaffles

  • 1 cup Shredded Mozzarella Cheese
  • 2 large Eggs
  • 1/4 cup Almond Flour
  • 1 tsp Vanilla
  • 3 tbsp Swerve Confectioner's Sugar Substitute
  • 1/4 cup Keto White Chocolate Chips
  • 1/4 cup Unsweetened Dried Cranberries

Cranberry Topping

  • 1 cup Fresh Cranberries
  • 2 tbsp Water
  • 1/4 cup Sugar-Free Maple Syrup

Instructions

  • Preheat a mini waffle maker.
  • Whisk together all of the chaffle ingredients in a mixing bowl.
  • Place a bit of the batter onto the preheated mini waffle maker, and cook it until done to your liking (usually 3-5 minutes).
  • Repeat step 3 until you have used all of your batter.
  • While the chaffles are cooking, add the fresh cranberries and water to a pot over medium heat on the stove. Simmer until the berries soften and begin to burst open.
  • Mash the berries lightly.
  • Remove from the heat and stir in the maple syrup.
  • Serve the chaffles with the cranberry maple syrup on top.
