1cupShredded Mozzarella Cheese
2large Eggs
1/4cupAlmond Flour
1tspVanilla
3tbspSwerve Confectioner's Sugar Substitute
1/4cupKeto White Chocolate Chips
1/4cupUnsweetened Dried Cranberries
Cranberry Topping
1cupFresh Cranberries
2tbspWater
1/4cupSugar-Free Maple Syrup
Instructions
Preheat a mini waffle maker.
Whisk together all of the chaffle ingredients in a mixing bowl.
Place a bit of the batter onto the preheated mini waffle maker, and cook it until done to your liking (usually 3-5 minutes).
Repeat step 3 until you have used all of your batter.
While the chaffles are cooking, add the fresh cranberries and water to a pot over medium heat on the stove. Simmer until the berries soften and begin to burst open.
Mash the berries lightly.
Remove from the heat and stir in the maple syrup.
Serve the chaffles with the cranberry maple syrup on top.
