1Head of Cauliflower cut into bite-sized pieces
1/4cupCotija Cheesecrumbled
1/4cupMayonnaise
1/3cupSour Cream
1Lime
1/2tspGarlic Salt
1/4tspChili Powderadd another tsp for roasting the cauliflower
1/4tspCumin
3tbspOlive Oil
1Jalapeno
Instructions
Preheat the oven to 420 degrees F.
Spread chopped cauliflower on a large baking sheet. Drizzle with olive oil. Top with 1 tsp of chili powder.
Cook for approximately 20 minutes, tossing halfway.
In a bowl, whisk together mayo, sour cream, garlic salt, chili powder and cumin. Stir in the juice of ½ lime (approximately 1 tbsp). **Slice the remaining half of the lime into wedges.
Remove cauliflower from the oven and top with dressing. Garnish with cotija cheese, fresh cilantro, and sliced jalapeno (if desired). Serve with remaining lime wedges.
