Ingredients

  • 1 Head of Cauliflower cut into bite-sized pieces
  • 1/4 cup Cotija Cheese crumbled
  • 1/4 cup Mayonnaise
  • 1/3 cup Sour Cream
  • 1 Lime
  • 1/2 tsp Garlic Salt
  • 1/4 tsp Chili Powder add another tsp for roasting the cauliflower
  • 1/4 tsp Cumin
  • 3 tbsp Olive Oil
  • 1 Jalapeno

Instructions

  • Preheat the oven to 420 degrees F.
  • Spread chopped cauliflower on a large baking sheet. Drizzle with olive oil. Top with 1 tsp of chili powder.
  • Cook for approximately 20 minutes, tossing halfway.
  • In a bowl, whisk together mayo, sour cream, garlic salt, chili powder and cumin. Stir in the juice of ½ lime (approximately 1 tbsp). **Slice the remaining half of the lime into wedges.
  • Remove cauliflower from the oven and top with dressing. Garnish with cotija cheese, fresh cilantro, and sliced jalapeno (if desired). Serve with remaining lime wedges.
