This is the perfect dessert when you don't want to bake. These low carb no-bake strawberry cheesecake bites have a coconut flour crust.
In a bowl, whisk together coconut flour and powdered sugar alternative.
In a separate bowl, heat butter, maple syrup and coconut oil in the microwave. (I did 20-second intervals).
Mix melted ingredients with coconut flour, until you have a crumbly dough.
Press dough into a parchment (or foil) lined pan. (I used a loaf pan to create thicker bars). Set aside for now.
In a large bowl, combine all ingredients for the cheesecake layer (minus strawberries). Using a hand mixer or stand mixer, mix everything together until creamy and fluffy.
Pour batter over the crust. Top with sliced strawberries.
Place in the refrigerator for approximately 8-12 hours.
Remove and slice when you are ready to serve.
